LUNCH/DINNER 
I never really know what to call this meal because my family tend to eat our 2nd meal well after lunch but too early for dinner which sort of just happened naturally and is what works well for us. 
I was really craving some noodles today but after my dad made some veggies and steaks, and there also being left over potatoes from yesterday. I decided to make @lindamccartneyfoods sausages with the left over potatoes and the Stir fried veg my Dad made. 
This was a super delicious and quick meal which I also adapted by adding some edamame beans and mangetout to the stir fry. I also drizzled some tahini on top ‍️ Ive been having an okay day but when it came to cooking and eating my mood vegan to shift again. I really don’t know why I’m at such an unease around food today because the rest of my day has actually been really good. I feel like maybe because I wanted noodles and there was a bit of a change and the food maybe wasn’t exactly what I wanted similar to this morning I’m just feeling an underlying anxiety and guilt.. I’m not sure how to explain it to be honest but maybe you guys have gone through something similar?? btw I also snacked on some bread and Nutella after finishing this so it’s a reminder that not everything you see is exactly how it is, a pic is just a snippet of a day x

We like it hot so I added loads of chilli and cayenne pepper along with cumin, garlic, tomato puree and lea and perrins. 
Fried off turkey mince in all the seasoning, added red onion, peppers and kidney beans and slowly cooked for about an hour. Then added in cooked basmati rice. That's it! #dirtyrice #turkeymince

Sesame turmeric tofu scramble on sourdough:
I pressed the liquid out of my tofu and forked the heck out of it to scramble. It marinated overnight in sesame oil, turmeric, black pepper, onion powder, and a dash of coconut aminos. In the morning, I panfried mushrooms and spinach in avocado oil until the mushrooms browned and spinach was wilted. Then I added the tofu and cooked it until it developed an amber color. Served this scramble of deliciousness on a slice of sourdough with hummus. Holy moly. THIS is how breakfast should always be

Last weekend I traveled to hang out with family in Philadelphia and this past Saturday I headed up to the Hudson Valley for a day of hiking with friends. Whether I’m helping to wedding plan , scrambling up a mountain, or just tackling a busy week you better believe that staying fueled and energized is a top priority, which means… ALL.THE.SNACKS! I tend to see snacks as mini-meals, especially when I anticipate my normally scheduled meals to be thrown off kilter, so I aim for a BALANCE of nutrients to sustain my energy and hunger levels. Snacks that are portable and not going to create a mess are definite bonuses I keep in mind when bringing food on-the-go.

I’ve been in desperate need of a fresh start! Today is DAY 1 of my 6th round with my favorite program!

Here’s some real talk! These last six months have been the harderst months of my journey. I’ve felt very much like a failure. But I’m NOT a failure.  It was just a test. 𝐀 𝐑𝐄𝐃𝐈𝐑𝐄𝐂𝐓 (thanks @autumncalabrese ).

I was being directed towards something bigger than I knew at the time, because it’s hard to see the reasoning while we’re in the middle of it all.  I was given my setbacks to make me a better coach, to rise further than ever before, to be a better person in general.

These past few months haven’t gone as I’ve wanted, but I’m refocused on what matters.  I’m letting go of what doesn’t matter and the things that I have no use for in life.

Hands up if you love quick recipes!!  If you're anything like me by the time Monday comes around there is no way for a fancy breakfast. That's why work days mornings I've mastered a simple meal prep breakfast!! .......
This AMAZING Chia Pudding recipe takes under 5 minutes to make and then the fridge does the rest. Best part it lasts the whole damn week!! This way I fuel properly with homemade meals & snacks so I stay on track and not get those afternoon hunger attacks! ....
Basic Chia Seed Pudding Recipe 
1/3 cup chia seeds @nutiva
1 cup Unsweetened milk @malkorganics
1/2 tsp cinnamon
1/4 cup fruit (blackberries, mango)
1 Tbsp Flaxseeds @manitobamilling
2 Tbsp Nut Butter @spreadthelove
Optional: sweetener of choice
4oz yogurt to add more protein or texture
Fruit, Cacao Nibs, Coconut Shreds....

Instructions
1️⃣In a mason jar, mix together chia seeds, milk, maple syrup and vanilla. If you’re using a mason jar, shake with lid.
2️⃣Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir/shake to break up any clumps of chia seeds, cover and place mixture in fridge for 6 hours or overnight. The chia pudding should be nice & thick, not liquidy. If it’s not thick, just add more chia seeds, stir and refrigerate for another 30 minutes or so.
3️⃣When ready to serve, top the pudding with berries and enjoy.

Hands up if you love quick recipes!! If you're anything like me by the time Monday comes around there is no way for a fancy breakfast. That's why work days mornings I've mastered a simple meal prep breakfast!! ....... This AMAZING Chia Pudding recip

i freeze a lot of my fresh berries so i used them to bake a batch of blueberry muffins!!  i usually eat one before workouts in the morning or as a mid-day snack if i’m craving one! made with whole wheat + oat flour, and definitely bursting with juicy blueberries! made this batch before heading off to a @soulcycle class!
———————————————— ingredients: makes about 18 standard sized muffins!
2 cups oat flour
1 cup whole wheat flour
1/4 cup sugar
1 tbsp baking powder
1 tsp salt
3/4 cup maple syrup
1/4 cup applesauce
1/4 cup coconut oil
2 @vitalfarms eggs
2/3 cup @califiafarms almond milk
1 1/4 cup blueberries
directions:
1. preheat oven to 400F. line muffin tray with liners, spray with oil.
2. in a large bowl, mix together oat flour, whole wheat flour, sugar, baking powder and salt.
3. in a medium bowl, mix together maple syrup, applesauce, melted coconut oil, eggs and almond milk.
4. pour wet ingredients into dry. fold in blueberries. add batter into muffin liners, about 2/3 full.
5. bake for 18-20 minutes or until toothpick in center comes out clean!

Red Thai Curry with Monkfish and Cauliflower!

A quick and easy red Thai curry for supper this evening... to soak up the weekend’s social demands 🥴. I like to have the odd ready-made curry paste in the cupboard for times like this when making from scratch just doesn’t appeal. What appeals is curling up in front of the TV and an early night... exhausted . To make (for 4)
.
Start with a 2cm cube of fresh ginger, grated, a few garlic cloves, crushed, two spring onions, sliced and half a medium red chilli, finely sliced - all in a pan or wok together with a glug of olive oil. Fry over a moderate heat for a few mins before adding in one small cauliflower, cut into small florets and stir fry for another minute or two
.
Then add in your curry paste (I used the Gang Ped (red curry) paste from @thaitasteuk), a tin of full fat coconut milk, a dessert spoon of fish sauce and a tsp of muscovado sugar. Bring to the boil and immediately reduce to a simmer. At that point add in one large monkfish tail, cut into largish cubes and continue to simmer for around 10 mins, until the fish is cooked through
.
Finally, finish off with some quick stir fried green beans, a squeeze of lime juice and some fresh basil. Serve with some nice Thai sticky rice

I woke up this morning needing a bit of perspective, and I thought I'd share this awesome comparison of macros and calories.
.
If you are still counting calories, i encourage you to think about your meals in this fashion, too. It is my firm belief that calories are not all created equal, and I have seen time and time again how little changes in macronutrients (protein/carbs/fat) can have a profound impact on a person's physique.
.
Healthier food is full of the necessary macro- and micro nutrients that our bodies need to lose fat, gain muscle, and be in our best shape. If we deprive ourselves of these things, then weight loss won't happen because we are not in a favorable state to do so. It is a high-stress environment, and the body doesn't do well with that. It will simply conserve all of its resources (AKA hold onto the weight).
.
I tried it to simplify this as much as possible, because in reality it's a complicated process. But the takeaway message is this: eat enough food that is healthy, unprocessed, varied, and full of protein, vegetables, healthy fats, and limited (or NO) sugar! Have a wonderful Monday

Anyways, goo-like or not, this layered berry french toast was oh so good despite the questionable aesthetic

French Toast Details:

️ pieces of French toast (I used @simplekneads_gf). scramble 1 egg and mix with cinnamon, vanilla, and a splash of milk. Dip both sides of bread in the egg mixture then cook in a skillet with a little butter on medium until golden brown. I cut mine in half and then layered them with topped mine with warmed up frozen mixed berries (heated in a saucepan with a splash of water and maple syrup. Simmered until the berries start thicken), and @culinayogurt bourbon vanilla coconut yogurt

Pas de post petit dej' donc, mais à la place je vous propose une inspiration salée

Des Pennes cuites façon one post pasta aux brocolis 🥦, petits pois et bacon 🥓 
Je vous ai détaillé ma façon de faire quelques posts plus bas mais pour résumer, on met tous nos ingrédients dans un fait tout avec un demi bouillon cube et des épices, on recouvre d'eau et à l'ébullition on laisse cuire le temps de cuisson des pâtes !
On touille régulièrement et on fait attention à ce qu'il reste toujours suffisamment d'eau !

J'adore cette façon de cuisiner les pâtes car c'est facile, rapide et déclinable à l'infini !

Berries & Dragon Fruit Jelly⁠
: @tastemade_japan⁠

Ingredients:⁠
1 package strawberries, halved⁠
Mixed berries⁠
1 dragon fruit⁠
Edible flowers⁠
Mint⁠
Cranberry jello liquid:⁠
1 cup cranberry juice⁠
1 1/2 tablespoons granulated sugar⁠
1 teaspoon agar agar powder⁠
Carbonated jello liquid:⁠
1 cup water⁠
1/4 cup granulated sugar⁠
2 teaspoons agar agar powder⁠
1 cup carbonated water⁠
⁠
Steps:⁠
Use a melon baller to scoop out the dragon fruit and place a few pieces in a Bundt pan. Add some of the mixed berries and strawberries.⁠
For the cranberry jello: In a small bowl, combine agar agar powder and sugar.⁠
Boil cranberry juice in a small saucepan, and add agar agar and granulated sugar mixture. Whisk to combine, then remove once sugar has melted.⁠
For the carbonated jello: In a small pot, bring water to a boil. Add agar agar powder and sugar and whisk until melted. Remove from heat, then add carbonated water and stir to combine. Pour this mixture over the fruit until it is covered. Place pan in refrigerator until solid.⁠
Add more fruit to the pan and pour more of the carbonated jelly over the top. Place in refrigerator until solid.⁠
Add remaining fruit, then pour the cranberry jello over the top. Return to refrigerator until solid. Another great banana snack created by my children! It was so good!  And it was so easy! It’s great seeing them be so confident in the kitchen, choosing healthy foods and creating their own snacks! 
Ingredients:
1 banana
Almond butter
Chia seeds
Coconut flakes
Pecans
Fresh figs

Directions:
Slice banana in half, then slice in half lengthwise Spread on almond butter
Add chia seeds, pecans and coconut flakes
Slice fresh figs and add to the banana
