Quinoa Salad
INGREDIENTS:- 1. 1/2 cup quinoa
2. 1 cucumber
3. 1 tomato
4. 1 onion
5. 1/2 bell pepper
6. 1/2 cup cheese of your choice (I used fresh homemade cottage cheese)
7. Salt to taste
8. Freshly crushed black pepper
9. 1/2 lemon
10. Pinch of chaat masala 
11. 2-3 drops of oil. 
METHOD:- 1. Boil the quinoa with oil & salt.  2. Dice all the veggies  3. Crush the cheese  4. Let the quinoa cool down  5. Now, mix all the ingredients together.  6. Add salt, black pepper, lemon & chaat masala .  7. Serve it chilled or on room temperature.

*Cook up some quinoa according to packet instructions
*Chop up cucumber, cherry tomatoes, red onion, peppers & fresh parsley (or whatever veg/salad you like!)
*Once the quinoa is cool, toss in all the chopped salad, a good squeeze of lemon juice, some balsamic vinegar and salt & pepper
*Add some chopped up feta if you want too

Recipe of the week: Fresh Quinoa Bowl 🥗

Some days ago I shared a picture of this quinoa bowl I ate for breakfast as part of my detox process, and some of you wanted the recipe, so here I’ll be sharing it with you.

The great thing about this bowl is that it is so simple, refreshing and versatile that you won’t need much time to prepare and you could eat it for breakfast, lunch or dinner and still get a balanced meal which is vegan, gluten free, dairy free, all at the same time! 

Without further ado, here is the recipe:

Ingredients:
2 cups of cooked quinoa (or ⅔ cup of dry quinoa)
½ big cucumber (or 1 medium)
1 green onion
1 medium-sized avocado
The juice of 1 lime
Olive oil
Salt & Herbs to taste

Preparation:
1. After soaking the quinoa overnight with a dash of apple cider vinegar, rinse well and clean many times until all the foam is gone.
2. Then prepare the quinoa by adding double the amount of water (~1 ⅓ cups of water)
3. Add a pinch of salt and let it simmer for about 15 min on medium heat.
4. Let it cool and in the meantime proceed to chop the cucumber, avocado and green onion in very tiny squares.
5. Mix everything in one bowl, add the lime juice, olive oil, and herbs, and stir well until everything is combined.
6. That’s it! Ready to be enjoyed!

Rote Beete-Quinoa-Salat

Du brauchst dafür:
1 Tasse Quinoa (Rohgewicht)
Gemüsebrühe
1 kleine Knolle Rote Beete
1/2 Zucchini
Cocktail-Tomaten
Olivenöl
Salz, Pfeffer

So einfach gehts:
Quinoa mit 2 Tassen Gemüsebrühe köcheln bis er gar ist. Falls du eine frische Rote Beete hast musst du diese auch gar kochen, du kannst aber auch fertig gekochte Rote Beete kaufen. Währenddessen die zucchini klein würfelig schneiden und langsam in einer Pfanne braten. Wenn alles fertig ist in einer Schüssel verrühren und etwas durchziehen lassen.

Du kannst ihn ruhig am Vortag vorbereiten und zur Arbeit mitnehmen #mealprep

I’ve topped mine with more coconut yoghurt, frozen berries, maple syrup, almond butter, coconut flakes and last but not least @livias delicious almond nugglets.

Quinoa is high in fibre with no compromises on taste, just put together some cooked quinoa-1cup, 1-potato, 1/2 a bell pepper, 1tbsp chopped spring onions, Salt to taste, green chillies if u like it spicy, mash them together, turn them into patties, roast them with a drizzle of olive oil and here they are... I made a tomato quinoa risotto for dinner and it was great (although it’s not REALLY a risotto because I didn’t use any broth). I hadn’t cooked quinoa for awhile and now that I’ve had it again I’m going a bit crazy, as you can see. The recipe will most likely be up on the blog tomorrow. I hope you all had a fabulous Monday!

I was away this weekend spending time with friends at a local festival, so I took a bit of a break from social media to enjoy myself ️️ . It was much-needed and I feel fully energized and ready to get back to the kitchen this week ‍

I was trying to decide what to eat ALL DAY today! I am a full supporter of planning and preparing meals in advance, but sometimes that’s not reality 🤷. I came home after a long day at work, went to the fridge, and threw together some leftovers I had been meaning to use up.
.
And voila! Here we have a quinoa stir-fry bowl, topped with a fried egg. And I have to say, it was SO TASTY 🤤. If I had 🥑🥑🥑, I would have added that too!
.
 Bowl Ingredients :
-Quinoa (whole grain - added protein)
-Egg (protein and fat)
-Edamame (protein)
-Veg: onion (I used red), red pepper, mushrooms, zucchini
-Canola oil (fat)
-Balsamic vinegar
-Salt and pepper to taste
.
To make, cook quinoa as per package instructions (For one portion, use approx 1/2 cup uncooked quinoa). Sauté onion in 1 tbsp canola oil for 1 minute. Add the red pepper, mushrooms, zucchini and edamame (about 2 cups of raw veg total) and 1 tbsp balsamic vinegar, sautéing until tender. Mix the cooked quinoa into the veggie stir fry mixture and add to a bowl. Meanwhile, fry one egg (to your liking), in a separate pan and add to the quinoa mixture. Top with some salt and pepper to taste.

Other ways I could have used these ingredients:
 Quinoa with scrambled egg and veggies in a wrap.
 Stuffed red pepper with quinoa, veggies, then topped with cheese.
 Quinoa mini quiches (made in muffin tins with egg, vegetables, milk and cheese)
.
I always like to think of new ways to use ingredients and leftovers to keep things exciting! Next time you have leftovers, plug them into Google and see what comes up . In a pinch, this can be super helpful and inspiring!

For the past 6 months, I have been working as a prep cook at a country club. Learning new knife skills in a fast-paced environment keeps me on my toes. It helps me improve my cooking speed and technique to be more of a professional chef. Honestly, since starting to cook for someone else, I lost a lot of my inspiration to cook for myself. I go out to eat more and it is greatly affecting my gut health. I am now taking responsibility for my health because the food you eat really does affect your mood. In order to ease my mind from negative thought patterns, eating at home keeps my cravings for carbs or sugar at bay.  I notice that when I eat sugar, I feel bloated and my mind begins racing with beliefs of “not good enough”. The less I eat sugar, the more energy I have to work towards my life goals. While at work, I was asked to make pico de gallo. I prepared some quinoa a few days prior and had some leftovers. I wasn’t sure how I was going to use it but didn’t want to throw it away. I never went grocery shopping and had some eggs in the fridge. A lightning bolt idea came through me, which this recipe became a reality. I love that I can eat something quick that’s easy to take with you anywhere. As a bonus, this meal provides leftovers, is easy to freeze, and keeps you full for hours. For someone 5’2, ~120 lbs, and is very active, 2 of these egg cups hits the sweet spot. Enjoy my delicious recipe below:

Man nehme:
2 Lauchzwiebeln 
3 Avocado 🥑 
500 g Cocktailtomaten 
1 Gurke 🥒 
1 Zucchini
4 Möhren 🥕 —-> von den dreien habe ich Zoodels gemacht (für die Optik), kann man aber auch mit dem Sparschäler machen, je nach Belieben 🤟
1-2 Packungen Feta
1 rote Paprika 
ca. 300g Quinoa (hell & dunkel gemischt)

Quinoa nach Anleitung in Gemüsebrühe kochen. Das ganze abkühlen lassen. Das Gemüsezeug schnippeln.  über die 🥑Stücke ne halbe  auspressen, damit diese nicht so oxidieren und braun werden 🤪
Alles in eine große Schüssel geben und mit folgendem Dressing übergießen:

1 ️ gutes Olivenöl, 
1 ️ weissen Balsamico (Bianco von Kühne oder Apfel-Balsam „vom Fass“ frisch gezapft) 1 Knoblauchzehe (optional), Honig oder Kokosblütensirup, gut 3-4  Basilikum gehackt, etwas Salz und Pfeffer, 2 TL Senf Alles gut verquirlen.... fertig. 
Kann ruhig etwas kräftiger sein, wird nachher gut vom Quinoa aufgenommen.

Cocina la quinoa según las instrucciones del empaque (yo utilicé la de @tiaofilia ).
Una vez cocida, agrega pimiento de los tres colores, cilantro, cebolla, sal, pimienta, un poquito de aceite de oliva fresco y limón.
Rellena los chayotes (previamente cocidos, partidos a la mitad, sin cáscara ni centro).

The star ingredient : Quinoa is gluten free, high in protein and one of the few plant foods that boasts of having the essential amino acids. Rich in fiber, magnesium & other vitamins it helps to keep the stomach full and guilt free for a long time. .. Recipe: boil one cup of washed quinoa with one & had cups of water stirring it on medium flame.. Once boiled transfer it to a bowl & keep it aside..
In a pan put 1-2 tablespoon of olive oil n heat it,, once heated add cumin seeds, mustard seeds and let it splatter. Put finely cut onion to it along with salt and saute till golden brown.. Add finely chopped tomato, green chilli, salt, tumeric powder & chilli powder (according to taste).. Once all saute add boiled sweet corn,chopped mushrooms & one small cup of water and keep stirring and cooking.. Once done switch off the flame n add the boiled quinoa and stir it till the all the cooked ingredients slither with each other.. And voila, the super healthy food is ready to be gulped down... Happy Eating

Happy Monday all! I hope the start of the week is being kind to you. We’ve had a busy day scrumping (shout out to my West Country folk) and searching the hedgerows for more blackberries. We wanted an easy dinner tonight so I made a quick lentil chilli with quinoa which is a favourite around here.
I’m just writing a meal plan for the week now and will put up on stories soon. What’s on yours this week? .

Quick lentil chilli. .

1 carrot
1 stick of celery 
1 white onion 
2 cloves of garlic 
1 tsp cumin 
1/2 tsp paprika 
1/2 tsp cinnamon 
1 heaped tbsp tomato purée 
1 tsp soy sauce 
2 tins of brown lentils 
2 tins of kidney beans in chilli sauce 
1 tin of good tomatoes 
Salt and pepper 
Handful of chopped coriander 
Quinoa. .
.
1. Heat some oil in a pan. Add the carrot, celery and onion and fry until softened. Add the garlic and continue cooking. Add the spices to the pan, stir and cook for another minute. 
2. Add the tomato purée, stir and add the soy sauce. Stir well to coat everything before adding the lentils, kidney beans with their sauce and the tomatoes. Leave on a medium heat to reduce, stirring intermittently to stop it sticking to the bottom. You could transfer to a slow cooker if you prefer. 
3. Prepare the quinoa. The general rule is 3 parts water to 1 part quinoa and boil for about 15-20 minutes but do check the packet instructions.
4. When the chilli is ready add a handful of chopped coriander and serve with the fluffy quinoa and a fancy avocado rose if you have time on your hands! .

I LOVE FOOD  But seriously! Like who doesn’t 🤷‍️ It’s something I’m really starting to enjoy having control of and getting my health in check  I’m also newly obsessed with quinoa so if you have a good recipe  send it to me! 
What’s something you’ve been doing positively for your health!? QUINOA TACO BOWL 
4 servings 
1 cup quinoa 
2 cup beef broth - BRING to boil, reduce heat and cover 15-20 min (until fluffy) **DON’T OPEN AND STIR** remove from heat, fluff with fork, cover for 10 min to keep extra fluffy!!
** I added some salt and pepper and bay leaves to it ** 1 lb ground beef 
1 tbsp garlic 
Salt and pepper to taste - BROWN together until meat is about half done then add 
1/4 large onion (I used red) 
3 medium/large bell peppers - I used green and red but you do you boo - STIR occasionally - until peppers are almost done *very scientific I know, just eat one and see if it’s squishy* then add 
1 zucchini - shredded 
1 packet taco seasoning (mix in 1/2 cup hot water to dissolve better) 
12 oz can fire roasted diced tomatoes - MIX and let simmer for about 5-7 minutes 
REMOVE FROM HEAT AND SERVE! 
I add cheese and sour cream, guacamole if you want

Quinoa edamame chicken salad with almonds, cashews and hazelnuts

Hadn't cook in 3 weeks. For the past 20 days, the 43℃ (apparent temprature) heat here in my city had been preventing me from doing so. Simply unable to stay in my rooftop house during the day.

During the prolonged heat peak hours, I retreated mostly to Ikari Cafe in my neighborhood and found its quinoa edamame salad surprisingly tasty, despite a bit pricy. Thank God the temperature dropped last weekends to bring me back the appetite cooking and dining at home again, and I decided to make the same, no, better version of that salad.

The translating task I'm doing at the moment has caught me in tension, have to constantly distract myself from it for our Olympic Committee mission. It's tough struggling in completely two different jobs, one for the living, the other a new career investment. Cooking is something I have long developed to help myself against all the pressures, if I've ever done it right, it brings the sense of achievement and certainty, the most ancient and down-to-earth solution to eliminate human's inherent anxiety.

Boiled string beans, quinoa and kiwis, fleur de sel & pepper, some infused water with kiwi & lime and if you have the chance and want to put a booster on this composition add a glass of sweet Sauternes.
