Thank you for all of your kind words on our exciting news ️️️ other than oatmeal for breakfast most of my healthy go-to’s haven’t sounded very good or set well with me. Don’t even get me started on the gagginess that I felt when I’ve tried to drink my beloved green smoothies 
Thank goodness over the past few weeks I’ve started to feel a little bit more myself, and that’s included being able to eat more normally. 
I’ve been craving basil lately ever since smelling it at our grocery store so I grabbed a plant on Saturday and made this salad for lunch yesterday and did a little meal prep. I shared in stories two of what these salads have looked like as we’ve eaten them this week! 
It was just as good prepped and leftover. I made it meat free, but feel free to sub the quinoa and goat cheese to make it paleo.

TOMATO BASIL ARUGULA SALAD (this makes enough for about 6 salads, we ate two day of and then had 4 leftover) •1 container baby or cherry tomatoes, sliced •4-6 carrots, sliced however you prefer •arugula •several basil leaves, chopped •quinoa, cooked (I did 1 cup cooked, which made quite a lot) •pumpkin seeds (1/8 cup per serving)
•hemp seeds (1/8 cup per serving) •goat cheese (1 oz per serving) *could easily sub mozzarella here and it would be amazing 
Dressing: a drizzle of @traderjoes balsamic glaze, @chosenfoods avocado oil, and half a lemon squeezed.

I’ve spent a lot of my life trying to pretend I wasn’t a homebody, but I fully accept and embrace that fact now. I love traveling and I love seeing and experiencing different things, but my favorite part of trips is often returning to my own home. I like routines and I like my own kitchen. I like familiar foods and the sights and smells and comforts of my home. I also like that I have a partner who enjoys being a homebody as well. We both breathe a sigh of relief when we walk through the door 
Here’s what’s in my breakfast bowl: - [ ] @bobsredmill gf quick oats, cooked with a 1/4 of banana and almond milk - [ ] Berries! Berries are so good right now. - [ ] @naturalgrocers freshly ground almond butter - [ ] Homemade chia pudding (I just do plant based milk in a mason jar, add 2-3 T, shake it up, and then add a few more in a few hours if it’s not as thick. Optional: add a little maple syrup) - [ ]

I GOT TO GO ON MY FAVORITE HIKE. And I’m really geeking out about it, if you can’t tell. Living in Utah, there are literally thousands of beautiful trails/ hikes, but this one right outside of Vernal is my favorite. 1) because it’s close to where my dad lives 2) it’s largely undiscovered - I rarely see people there 3) it’s got some awesome craziness going on - due to some nature made tunnels, half of the creek that runs along it is totally dry, While the other half has running water! 4) it’s just gorgeous. I almost tear up at some points. Only thing that would have made it better was if hubby was there, but he was hard at work ️ Happy Thursday!

My husband’s reaction when I showed him this pic was “good and pretty basic,”  which is actually what I was going for. 
The unfortunate tendency for me, as a food blogger, is to add more to make it look more colorful or lovely or WHATEVER. But the reality is my stomach feels better after simple meals, and my kitchen is less insane. 
It wasn’t until after we cooked this dinner and were sitting down to eat that I realized we hadn’t done really much seasoning other than a little @chosenfoods avocado oil and salt and pepper! Sometimes food doesn’t need a lot:) Here’s what’s in this bowl:
- [ ] Sweet potato noodles sautéed (we used 2 medium for the three of us) with some spinach folded in at the end for grownups - my daughter prefers hers separate - [ ] Grass fed steak - we just had one divided between the 3 of us. Could sub portobello mushroom or black beans if vegan - [ ] Avocado - again, we divide between the 3 of us, I sprinkled some hemp seeds on mine - [ ] Jicama slices

Easily my favorite breakfast I’ve had as of late, so much so that I’m out of all the ingredients this morning  check my story for what we had this AM instead 
This bowl:
•@culinayogurt blueberry lavender (can’t even taste the lavender). This is my FAVE new yogurt. Most dairy free yogurts are loaded with gums and other crap to give it a better consistency but not this one. •@lovegrown lion loops •@traderjoes mixed nut butter •hemp seeds for protein •black raspberries picked by hubby and I at his parents house! 
This yogurt bowl is perfect while it’s sometimes too hot to do a warm breakfast, and if you’re looking for something quick. You could easily layer it parfait style on your way to work or school  Happy Tuesday, friends!!

CHOCOLATE CHIP ZUCCHINI BREAD WAFFLES 
That’s right. You heard me. Zucchini bread WAFFLES. With   I woke up craving zucchini bread but thought ain’t nobody got 45 minutes for bread to bake! 
These babies were SO good and so quick.

I modified them a bit from a version I found on @primalpalate website and written by @jessiskitchen . Next time I’ll throw in a few handfuls of spinach for another veggie dose! And double the recipe for waffles to freeze. 
These waffles are:
-grain free (made with @ottos_cassava_flour ) -dairy free
-paleo -could be made vegan
-protein rich thanks to a few scoops of @vitalproteins -tested and approved by kiddo and hubby

Oatmeal is one of my breakfast regulars, so here are some ways I’ve been upping the protein by adding: - [ ] chia pudding - [ ] Hemp seeds - [ ] Buckwheat groats (all out, but normally I add them in for a delicious crunch of protein and fiber) - [ ] Collagen - [ ] An egg on the side, or egg whites whipped into oatmeal 
This bowl has @bobsredmill oats, homemade chia pudding, local sweet cherries, pistachios, @traderjoes mixed nut butter, hemp seeds, and some bee pollen.

It’s not summer until you’ve had your first  spinach salad right? 
Berries so ripe and sweet they taste like candy, crisp spinach, tangy goat cheese (I could eat a whole log by myself ), chopped nuts, and diced cukes 🥒 . Topped with a Dijon honey lemon vinaigrette. I’m seriously making my mouth water just thinking about the salad again 🤤 
SUMMER BERRY SPINACH SALAD (makes 1-2 salads) - [ ] 1- 2 cups spinach - [ ] 5- 7 strawberries, washed and sliced - [ ] 1/4 cup chopped nuts (I used almonds, but pecans or walnuts would also be )
- [ ] 1 ounce goat cheese - [ ] 1/3 cucumber, lightly peeled and diced - [ ] Vinaigrette: 1/2 lemon, 1 T balsamic, 2 T @chosenfoods avocado oil, 1/2 tsp honey 1/2 tsp Dijon *** ***feel free to add more or less of things, depending how sweet or tangy you like your dressings

We served a little frozen healthy pizza on the side of the salad, but I ended up just wanting to eat the salad, and was totally satisfied by it. Perfect for a summer dinner  or a lunch meal prepped.

We had a little mini breakfast celebration for my husband this morning because today’s his last day before he’s his own boss full time! Very early on dating, he shared his dream with me to own his own excavation company, and I’m so proud of him for making that happen, and in a much shorter time than he had always planned. He is the hardest working man and I know he will do amazing things ️ This breakfast also was our family’s little 4th of July celebration since we will be doing things tomorrow with family!
I’ll take any excuse to have red and blue berries 
I opted for some quick waffles, since breakfast was early early this morning - I love the @naturespathorganic GF pumpkin spice ones.

If you’ve followed me for a while then you know my deep LOVE for pesto. It’s a delicious and different way to incorporate your herbs and greens and is so refreshing!
This was a sort of leftover/ fridge clean out meal: 🥬 PESTO:
•@traderjoes kale pesto, 1/2 container •juice from one lemon •2 handfuls or arugula •1 handful basil 
Blend it all up! 
Serve over your favorite pasta (this is @traderjoes quinoa and brown rice) or veggie noodle. I also threw in a few slices of chicken sausage. It was an easy and delicious weeknight meal

Loaded with protein, simple ingredients, and low in sugar, it’s the perfect replacement for milk in the chia pudding ratio. I topped mine with some fresh strawberries hubby picked for me, almond butter, and hemp seeds. The perfect protein packed breakfast  #dailysiggis #siggispartner

Oatmeal is my go-to weekly morning breakfast. Weekends are usually when we splurge on time to make pancakes, or are out for brunch. I love oatmeal for how fast it is (even faster if you're doing overnight oats) that it's chock full of vitamins and minerals, fiber, and protein. But my FAVE thing about it is being able to customize the flavors. It's like a blank slate! I woke up craving chocolate and cherries and this is what I came up with:
-1/2 cup @bobsredmill quick oats, made according to directions, but add in half of a mashed banana for sweetness
-a few squares of @lilys_sweets_chocolate 70% dark -frozen sweet cherries
-buckwheat groats, hemp seeds, and bee pollen
-@traderjoes almond butter

Oatmeal is my go-to weekly morning breakfast. Weekends are usually when we splurge on time to make pancakes, or are out for brunch. I love oatmeal for how fast it is (even faster if you're doing overnight oats) that it's chock full of vitamins and mi

One of my childhood favorites and fond food memories was a peanut butter, chocolate, and marshmallow grilled cheese. Obviously the cheese was omitted, but my parents would put a little butter on either sides, fill the middle with the PB, chocolate, and marshmallows, and it would cook to a melted and gooey perfection. 
This is my #wafflewednesday take on that sandwich. 
The base is buckwheat waffles (I shared a little bit of the cooking process in my stories):
-1 cup buckwheat flour
-1-2 tsp. monk fruit sweetener or coconut sugar
-1/4 cup hemp seeds
-1 chia egg
-1.25 tsp baking powder (aluminum-free!)
-1 tsp. baking soda
-1/4 tsp. salt
-generous dashes of cinnamon -1.25-1.5 cups almond or cashew milk -1/4 cup melted coconut oil (virgin, unrefined)
-1/2 overripe banana
-1 scoop @vitalproteins or @alohamoment for vegan

Mix everything in @vitamix or another high-speed blender. Add to pre-greased (with coconut oil) waffle iron). Recipe adapted from Cookie and Kate. 
Top with: melted @mydandies marshmallows and @enjoylifefoods chocolate chips, and @mysmithsgrocery natural peanut butter

VEGAN BLACK BEAN & PINEAPPLE ENCHILADAS 
I’ve made these two nights in a row now because they’re just THAT good. Last night we just ended up making quesadillas with the filling and eating it with chips! 
INGREDIENTS:
•1 diced red bell pepper •1 can organic black beans (I like the simple truth brand from @mysmithsgrocery)
•1 small can Hatch green chiles •1-2T dehydrated onion (you can, of course, use a fresh one, but this is just a weeknight time saver for me) •1/2 cup pineapple tidbits with a few tablespoons of reserved juice •1/8-1/4 cup @fronterafoods red enchilada sauce
•1/2 lime squeezed right at the end 
Optional: tonight I added a few extra 
veggies: zucchini, Swiss chard, and some tomatoes. Tasted the same but was a heartier filling. •@sietefoods chia tortillas and nacho cheese for topping 
DIRECTIONS: sauté your toughest veggies for a few minutes in avocado oil until softened, then add remaining ingredients. Cook for about five minutes or until liquid is mostly gone. 
Put 2-3 spoonfuls of mixture in tortillas, then tightly roll and push to one side of the pan. Poor remaining sauce on and top with cheese if you want (vegan or otherwise), then bake for 350 for 15 minutes. I topped mine with the cashew nacho cheese from Siete 

Top with avocado, cilantro, jalapeño, pepitas, and anything else your heart desires! Happy #tacotuesday

The other day I woke up craving flaky, dense, corner-crunchy brownies and remembered the Hershey’s brownie recipe I used to make religiously years and years ago. 
Normally, it takes a few trial and errors to find a really good healthy AND gluten free substitute but I had the very best lucky stumbling upon these brownies! This recipe is by @onelovelylife1 and is absolutely perfect I followed the recipe exactly. I’ll share the directions in comments as they won’t all fit! Happy Sunday! MAKE THESE BROWNIES!! Your mouth will thank you ️ * 	2/3 cup semi-sweet or dark chocolate chips (I use dairy free chocolate chips)
* 	5 Tbsp coconut oil (can sub butter, avocado oil, vegan butter, ghee)
* 	2/3 cup coconut sugar (can sub white, brown, or maple sugar)
* 	2 eggs
* 	1 tsp vanilla extract
* 	2/3 cup blanched almond flour
* 	2 Tbsp unsweetened cocoa powder
* 	1/2 tsp baking soda (if paleo) or baking powder
* 	1/4 tsp salt
TO MIX IN:
* 	2/3 cup additional chocolate chips or chopped chocolate (can sub nuts)

Make this parfait:
-chia pudding on the bottom (3 T chia seeds to 2/3 cup almond milk)
-frozen raspberries -@siggisdairy raspberry yogurt -more raspberries -granola (can omit if low-carb or grain free) -nut butter 
Best if consumed within 1-2 days. Enjoy!

I discovered some awesome new gluten free bread! It's made by @kimandjakesglutenfree. I'm not sure if they have it available to order online, but I found this at my local @naturalgrocers. It's called a peasant loaf but it tastes and feels like sourdough. 
One of my favorite snacks in high school (courtesy of a very inventive friend) was a peanut butter and honey open faced sandwich, which sliced bananas, honey, and Rice Krispies on top! I switched the Rice Krispies for buckwheat groats, and added some bee pollen. 
Although bread isn't my usual go-to for breakfasts or lunch, I love having an option if I want some GOOD bread. Bonus, it's vegan and yeast free, yay!

I discovered some awesome new gluten free bread! It's made by @kimandjakesglutenfree. I'm not sure if they have it available to order online, but I found this at my local @naturalgrocers. It's called a "peasant loaf" but it tastes and feels like sour

Depending on your work schedule, the weekend is often the time the best time for many people to shop and prep their meals for the week. I highly recommend adding this to your menu for next week 🤤 
SRIRACHA TURKEY MEATBALLS:
•1 lb. antibiotic-free ground turkey (or the best quality you can afford, I use @maryschicken) •1 egg, or can sub about 1/2 a cup of wet vegetables grated like zucchini or carrot •1/2 cup almond flour •1 T dehydrated onion flakes
•1 tsp garlic powder
•salt & pepper 
SAUCE:
•1 to 3 ratio sriracha/ natural ketchup •1/4 cup coconut aminos •juice of 1/2-1 lime •optional: dash of sesame oil, ginger, more garlic powder - whatever flavors you prefer! 
DIRECTIONS: 
Preheat oven to 350. Line a baking sheet with parchment paper. 
Mix all ingredients for meatballs in large bowl. Scoop out even portions of mixture onto the parchment paper. 
Bake meatballs for 15-25 minutes (depending how thick they are) or until internal temperature is 165. 
While those are cooking, whisk together sauce ingredients. Add to a frying pan when they have just a few minutes left, then add the finished meatballs to the pan, and let them get nice and saucy. 
Optional sides:
•brown rice (do sweet potato or cauli rice for paleo) •carrot shreds
•bell peppers •coconut aminos sautéed broccoli - just add a little avocado oil and coconut aminos to a pan and sauté the broccoli in it

One of the most exciting things I've stumbled upon in the last several years is entrepreneurship. I'm currently on my 4th business, this one being almost entirely digital (so far). I love how an idea, a passion, or a hobby can evolve into something big, small or medium, that offers alternatives to the traditional 9-5 whether that's extra money on the side or a full-time career. One of my favorite things about it is the additional freedom it offers - the ability to wander around a giant cactus farm (doing a post soon about Cactus Joes!). The more each of my businesses grow, the more I learn about myself. If the word entrepreneur is scaring you, redefine it! If I had one takeaway for you, it's to realize that you don't need a boatload of cash or dreams of becoming a Fortune 500 company to be an entrepreneur. -buckwheat groats (I buy mine in the bulk bin at Smiths! Adds protein and fibers)

While all those things aren't required to have a healthy breakfast, I like the focus on adding more, not less, in terms of food. The restriction mindset just doesn't work for me - it never has. Instead, focusing on what better things can I ADD to my diet? Different mindsets work for different people, but if you find yourself struggling with your relationship to food, might I suggest trying a different outlook? KALE PESTO 
Happy Friday! If you grocery shop on weekends you know that fridges are looking pretty sad right now, with random leftovers. My favorite way to use up almost done greens or herbs is this pesto!

This recipe is so forgiving and so easy to customize to your preferences. For instance, more or less or diffeeent greens, additional herbs, garlic (I prefer my pesto without garlic but you could easily add a clove), or add an avocado. The sky is really the limit  my favorite part is no expensive pine nuts are needed 

INGREDIENTS: 
1 cup kale leaves, stems removed 
1 cup additional greens (I was all out of mine today, but I missed the extra spinach!)
1 cup basil, plus additional herbs 
1/3-1/4 cup olive oil 
1/3 cup walnuts 
1 lemon, juiced and zested 
1 T nutritional yeast (can omit, adds a dairy free cheesiness)
Optional: use less or no oil and add 1/3 avocado 
DIRECTIONS:
Combine all ingredients in high powered food processor or @vitamix. 
Best fresh, lasts 2 days in the fridge. To serve again, add a little more lemon to bring it back to life!

I’m a huge pancakes and waffles fan, and here’s some there’s some tips for keeping this food group  in your life while still eating healthy:
1. Use lower glycemic flours - almond, coconut, cassava, and many more
2. Or do the good ole standby of 1 banana + 2 eggs + a little bit of almond milk 
3. Omit sugar in the batter
4.  Add in some spinach! You won’t taste it and you’ll get some awesome added nutrients.
5. Skip the syrup. I still have real maple syrup occasionally, but most of the time I just use almond or peanut butter and fruit.

Here’s how to recreate at home: 
1. choose a bread with good ingredients (go with sweet potato toast for grain free or paleo)

•1 tsp Dijon mustard 
Would be excellent served with a fried egg, grilled chicken, or sweet potato fries!

This is not my best picture, but it captures a joyously wonderful and delicious moment: enjoying an egg sandwich with my love this morning. 
The reason for the joy? Because for the first time in over eight months I can finally eat eggs again without digestive issues.    (I’m working on a blog post with more about it soon!)
Food has always been something I LOVED. Like to the point that anyone who knows me knows it’s an acceptable gift  I joke that it’s my love language. ️
Celiac disease put a pretty major damper on that joy for me. One that I’m over for the most part, but still sometimes makes me sad. 
So to add in eggs last summer, has meant a frustrating relationship with food these past several months. It’s made me want to cook less - and photograph my food less. It’s taken the JOY out. 
I woke up last Friday and thought about going downstairs and making breakfast and how all i wanted was to be a “normal” person and go down to our local amazing artisan bakery and enjoy a pastry worthy of Paris and a ciabatta egg sandwich. So much so that I started to cry. My wise fiancé said, “let’s have your one day of gluten today and go do that” (I usually have something with wheat on my birthday). I hadn’t realized until I was sitting there savoring my pastry (the second picture) how unhappy my relationship with food had become these past few months. 
I’m a huge advocate of the 80/20 lifestyle - eating a whole foods diet most of the time, and but still enjoying your favorite foods. But it’s not that simple with Celiac disease or other intolerances. However, this was the little reset I needed and I’m excited to say I’m feeling more joyful about food again ️ PS a very close second to “real” bread is @simplekneads_gf (which my egg is on). Bless them for making no wheat less terrible

I used @bobsredmill almond flour to make it healthier (and gluten free!) You can find their products at stores and online through my link in stories. 
This is a YOGURT cake. A few years ago I was playing around with some French recipes, one of them being a Yogurt Pot Cake. Basically, you use a pot (what they call a container) of yogurt to make it tangy and delicious. 
I made this with monk fruit instead of sugar, but feel free to use maple syrup or regular sugar instead. Feel free to add icing, but it's honestly good by itself! A perfect breakfast or mid-afternoon sugar-free snack!

INGREDIENTS:
2 ½ cups lightly packed @bobsredmill almond flour 
2 teaspoons baking powder
½ teaspoon kosher salt
1 cup whole milk yogurt
½ cup monk fruit sweetener
2 eggs
1 teaspoon vanilla extract
zest of 1 medium lemon
¼ cup olive oil + extra to grease pan

DIRECTIONS:
Preheat the oven to 350°F. In a large bowl, whisk together almond flour, baking powder, and kosher salt. In a separate bowl, whisk together yogurt, sugar, eggs, vanilla extract, and lemon zest. Add the wet ingredients to the dry and stir to combine. Slowly fold in the ¼ cup olive oil. Line an 8-inch cake or bread pan with parchment paper and coat lightly with olive oil. Transfer the batter to the pan, using a spatula to spread it evenly. Place on a rack in the middle of your preheated oven and bake for 35 minutes (or until the cake is lightly browned and a toothpick comes out clean)||sponsored||

Have you tried my dairy-free kale pesto recipe yet? I posted it in stories the other night. It's a weekly thing for me now, to use up any wilting kale. And really, that's just an excuse. I make it because I love it. Confession: I've used FRESH kale in it before. 🤫🤫🤫 If the word kale is freaking you out  you're welcome to replace it with your other favorite greens, but guess what? This is the most beginner friendly kale recipe I know. Meaning, you taste less kale than a salad of kale. 
INGREDIENTS:
1-2 cups greens (i do lacinto/ dink/ dark green kale and spinach)
1-2 cups herbs (my favorite is basil!)
1/8-1/4 cup olive oil (if you can use less, do so!)
1/4-1/2 cup walnuts
juice and zest of one lemon
salt and pepper to taste

optional:
1 T nutritional yeast - makes it more cheesy
garlic - my tummy doesn't love it so I don't make it with garlic. 
This recipe is SUPER forgiving. I've made it with less greens or less oil, or less walnuts. So play around with the ratios and see you what you like best!

DIRECTIONS:
Add everything to a food processor or blender. It works in a Vitamix, but I think it's a pain to scrape around the blades so I do it in a food processor. 
Serve over pasta! I love @eatbanza. It's made from chickpeas so #glutenfree AND full of protein. Hooray!

Do you ever want to sing to your food because it’s just so pretty and deliciously good?  or is it just me 
I looked at this bowl and thought of that song “good morning beautiful...” I’m so obsessed with stewed apples I always wonder why I don’t eat them more often. 
Side note: this was something different from my regular oats bowl, so when I finished this I was actually still hungry. Next time I would double my portions to be satisfied  This bowl was a delicious way to start the morning:
•no sugar coconut yogurt (no matter what yogurt you’re eating, dairy free or otherwise, please read the ingredients! Companies often sneak so much icky ingredients into yogurt) •apples sautéed until softened in coconut oil and cinnamon •buckwheat groats, hemp seeds, and bee pollen. If all those sound foreign to you, start with shelled hemp seeds. My favorite  place to purchase them is @naturalgrocers as they are $3.70 something compared to many other places AND they are kept in the fridge to retain freshness. •@traderjoes almond butter 
You could add your favorite granola, stir in protein powder, sky’s the limit for this easy breakfast bowl.

Good morning ️ I came across an interesting study last night (I’ll link it in my stories) about the AMOUNT of breakfast eaten.

Although it’s important to be starting the day off with nourishing foods that will fuel us, if our goal is weight loss, we may not be eating enough first thing. Especially as healthier foods tend to be less calorically dense than let’s say donuts  You might need to be eating MORE at breakfast!!  The study tracked individuals with obesity and diabetes, and the participants that ate half of their daily calories at breakfast (so like a lot more than normal) lost more weight and had lower hunger levels at the end of the study (than the ones who had smaller breakfasts). Not eating enough in the morning might be to blame for that 3 pm junk food hanger. 
The study laid out eating in the form of meals “a king, a prince, a pauper.” Essentially, having breakfast the biggest meal, lunch the second largest, and eating a small dinner. We need the most energy and calories to fuel us at the beginning of our day. Eating less at night can give our body’s digestive system a break, and divert that energy to other bodily functions (plus have you ever tried to sleep when you’re overfull? It sucks!) I’m still a huge proponent of intuitive eating, so depending on your cycle, your energy output for the day - you may still have days where you eat a big breakfast but are still hungry in the afternoon, and listen to your body then! 
But I think it’s worth trying an experiment in your own life, maybe see if eating more breakfast helps with that late afternoon hunger. Do you eat like this? Let me know your thoughts!

CARROT CAKE WAFFLES

So excited to share this recipe with you! Easter is right around the corner and a good way to keep the baking healthy is to use healthier flours! I'm using @BobsRedMill paleo pancake mix and it is SO good and so easy. Many local stores sell their products or you can get them online. 
TO MAKE:
Prepare according to package directions but add:
-1 tsp cinnamon
-1/2 tsp nutmeg
-1/4 tsp cloves
-1/2 tsp pumpkin pie spice
-1/2-1 cup shredded carrots (depending on how strong you like the carrot flavor)
-1/4 cup raisins (optional - I know many people are team no raisin haha!) Mix them all together, and add to a preheated waffle iron, greased with a little unrefined coconut oil. 
For the sauce:
-1/8 cup maple syrup
-2 ounces greek yogurt
-2 T sour cream (can up if you want it tangier)
Could also try vegan cream cheese subbed for varying results ^

I drizzled almond butter on mine and topped with bee pollen. Enjoy!

EASY WEEKNIGHT CURRY
The name of the game with me these days is 25 minutes or less for dinner. This recipe comes together in that amount of time (minus the cooking in the crockpot) but before and after prep is super fast  The creator of this recipe? My dad! He cooked a lot when I was growing up, always tinkering with a good recipe to make it great. He’s my go-to-guy for all food questions! 
INGREDIENTS:
•2 antibiotic-free chicken breasts (free-range and organic if you can afford) •1 T avocado oil •1 T ginger minced (I use a zester tool)
•optional: 1 clove garlic minced •1 can coconut milk •1/2 cup veggie or chicken stock •1 tsp red curry paste (can do more, adds more heat) •1/8 cup coconut aminos •1/2 can crushed pineapple •pinch of s&p

DIRECTIONS:
Prep garlic and ginger. Heat oil in a pan, and brown chicken on both sides with the garlic and ginger. 
Add chicken to crockpot, along with remaining ingredients.

I served mine with rice, zoodles, Swiss chard, red peppers, and 🥑 
You could definitely add veggies to the sauce, but sometimes my daughter eats them better raw, so I leave them out  Enjoy

If you want your house to smell real good and real cozy, bake up a batch of these real quick: •½ cup Coconut Flour
•1 scoop @vitalproteins collagen
•1 scoop banana flavored @alohamoment protein •	1 teaspoon Cinnamon •	½ teaspoon Nutmeg •	½ teaspoon Ground Cloves •	½ teaspoon Baking Soda •	½ teaspoon Baking Powder •	¼ teaspoon Salt •	2 eggs (I did 1 flax egg and 1 egg white) •	2 Large Bananas, Mashed (about 1 cup) •	1/4 cup maple syrup, 1 packet monk fruit sweetener •	3 Tablespoons Coconut Oil, softened •	1 teaspoon Vanilla Extract

Preheat oven to 375, mix dry and wet ingredients separately, then fold together. Pour mix into greased muffin tin. Bake for 15-20 minutes, or until toothpick is clean and firm to touch. Spread a little nut butter on top and ENJOY!

My most favorite meal I've made recently has been this Could be made totally plant-based (the recipe I used called for butter, but that could easily be swapped), and paleo if you switch the chickpeas for chicken wings. Either way, SO good. 
I love the flavor of Frank's hot sauce but it's WAYYYY too hot for me plain, so I found a recipe that made it more mild:
1/3 cup butter (I think I just did a few tablespoons), melted
1/4 cup @franksredhot 
1/4 cup tomato sauce
1/2 tsp. garlic powder
1/2 tsp. apple cider vinegar
1/2 tsp. @traderjoes coconut aminos

Mix all ingredients together. 
I roasted my chickpeas on a stovetop pan most of the way (5-10 minutes), and then added this sauce right at the end. 
Serve with the hemp seed Caesar I love so much!: 1 cup @naturalgrocers hemp seeds
1/2 cup water
2 T apple cider vinegar
2 T avocado or oilve oil
2 T nutriitonal yeast
1-2 T coconut aminos
1 T dijon mustard
1 tsp. garlic powder
s& p to taste
juice and zest from one lemon

These were diner-fluffy but much lower in sugar and packed with protein thanks to @siggisdairy yogurt. 
Here’s the recipe:

1 ½ cups of Cassava flour 
2 ¼ teaspoon baking powder
1 teaspoon salt
1.5 containers @siggisdairy yogurt, reserved other half for layering pancakes 
1/4-1/2 cup almond or cashew milk (may need more or less depending how dry it is) 
2 eggs
2 tablespoons olive oil or avocado oil
1 tablespoons maple syrup (can omit, just use an extra T cashew milk) 
Vanilla extract 
I mixed everything in my blender, and then cooked on low- medium heat with coconut oil. They burn quickly, so turn before you think they are ready. 
Top with nut butter, berries, and anything else your heart desires! Swapping the syrup for nut butter is a good way to keep this low in sugar  Recipe adapted from: Otto’s Cassava Flour Blog”

It’s not the prettiest bowl, but this salmon was ready in less than 25 minutes, along with the stir-fry  and so good 🤤🤤 While it’s a lot to read through, if you do it in the right order your dinner can be ready in 20-30 min:) even less time if you’re using salmon already marinated, chopped veggies, and pre minced garlic and ginger in the little glass containers. 
Ingredients:
•salmon fillet (I buy 5 ounce and split it to save $$ if I’m not overly hungry) •broccoli •carrots •quinoa (I prefer brown rice but I was trying to use up what I had!) •spinach •1 clove garlic, minced •1/4 cup coconut aminos •1 T rice vinegar •pinch of salt and pepper
•2 T avocado oil •1 T coconut oil •quinoa or brown rice microwave pack 
Sauce:
•1/2 cup coconut aminos •1/2 cup chicken stock •1 tablespoon arrowroot starch •1 tablespoon honey •1 teaspoon sesame oil
•1 teaspoon rice wine vinegar
•2 inch piece of ginger, peeled and grated •2 cloves of garlic minced
Recipe from tastes lovely 
Directions: 
Preheat oven to 425. 
Mix garlic, coconut aminos, rice vinegar, and avocado oil and spread over salmon. Even better if you marinate! 
Bake salmon for 15-20 minutes, or until internal temperature of 145.

While salmon is cooking, chop broccoli and carrots and garlic. 
Add your hardest vegetables first (carrots) and garlic into heated pan with melted coconut oil. Finish mixing up sauce while stirring occasionally. Add broccoli, cook for 1-2 minutes, then add sauce. 
Cook sauce in veggies for at least 3 minutes to thicken.

Enjoy!

It’s about this time of year when people realize that bathing suits are gonna be happening soon and panic and are ready to take on a diet or pretend they don’t like food for a certain amount of time 
Might I remind you of two things:
1. you can wear a bathing suit no matter your weight or size or perceived imperfections - news flash, everyone has them *also a spray tan goes a long way if you’re feeling timid haha*
2. If you do want to make lasting changes, both in your external and internal body, or your overall wellness, small and steady wins the race. Make a lasting sustainable lifestyle change, not a diet that will leave you  and hungry. 
Yesterday I caught myself trying to eat a little bit less for lunch, and then found myself ravenous in the afternoon, because, see above choices, I didn’t eat enough. 
If you’ve started eating healthier again (‍️ I ate out a lot during the move) or increased your exercise (also me‍️) you’re going to be not only burning more calories, but a plate of mostly greens is going to be far less dense calorically. 
Make sure to eat until you’re satisfied, include with those greens lean proteins, complex carbs, and a fat and you’ll be

I’ve been making an adapted buckwheat waffle recipe from Cookie & Kate for a while, but I wanted to try an express version (that didn’t involve making buttermilk or mixing separately).
They are slightly more fluffy if you follow the original version, but this egg-free one is still tasty and a little quicker. 
Plus, it’s made with blood sugar friendly buckwheat flour (not a grain a seed from a flowering plant). It’s got plenty of fiber and minerals, making this a healthy and delicious alternative to traditional waffles! * 1 c buckwheat flour
* Packet of monk fruit sweetener * 1/4 cup hemp seeds * 1 chia egg * 1 ¼ tsps baking powder
* 1 tsp baking soda
* ¼ tsp salt
* Generous dashes of cinnamon * 1.25-1.5 cups plant based milk * ¼ c coconut oil
* 1/2 overripe banana
* 1 scoop @alohamoment and 1 scoop @vitalproteins 
Mix everything in a high-speed blender.  Add to pregreased (with coconut oil) waffle iron. .

I’ve been making an adapted buckwheat waffle recipe from Cookie & Kate for a while, but I wanted to try an express version (that didn’t involve making buttermilk or mixing separately). They are slightly more fluffy if you follow the original version,

My mom always made all our food green to celebrate (including dyeing our milk green 🤣🤣🤣) and we definitely had green pancakes! 
But the best way to enjoy these green babies (without the food coloring) is to just add a handful or two of spinach and a scoop of @bnlabs greens to your favorite pancake recipe or mix  .

Happy Friday morning! I have missed my loaded oat bowls the past few weeks! Especially when I can get it filled with awesome things like:
•gluten-free oats •@vitalproteins collagen •1/2 banana cooked in •frozen blueberries and raspberries •buckwheat groats, hemp seeds, pumpkin seeds, and coconut shreds •all natural pb (look at the ingredients - should say nothing other than peanuts and salt ) I’m going to visit my mom this weekend, make a quick stop at @wholefoods and @traderjoes and maybe even pick up a plant baby for my new place  what about you?? .
