Instant Pot Pulled Chicken Adobo Bowls served over red rice with salsa, yogurt, and green onion. Super easy & fast to make!

Just added 2 chicken breasts to the instant pot with 1 cup chicken broth and probably about 2 generous tablespoons of @primalpalate adobo seasoning and pressure cooked for 10 min, letting pressure naturally release for 10 min afterward. Shred with two forks. Rice is @lotusfoods (prepared separately)

CHOCOLATE CHIP BANANA BREAD WAFFLES  These waffles are inspired by 2-ingredient banana pancakes. They were sooo good, but they did make my waffle iron a little messy  Recipe below:

1 large banana, mashed with a fork
2 eggs
1/8 tsp baking powder
1/4 cup cashew butter
1/4 tsp vanilla
1/2 tsp maple syrup
1/8 tsp salt
1/4 cup dark chocolate chunks

Mix everything together in a bowl until smooth (fold chocolate chips in last). Spoon into your preheated, greased waffle iron on medium high and cook for 3-4 minutes until waffles just become golden. Remove VERY CAREFULLY with 2 forks to prevent breaking. Top with flake salt, banana, and drizzle of cashews butter (+ maple syrup if you want ) Makes 3 waffles!

Made this fresh fettuccine with prosciutto, broccoli rabe, and ricotta salata from one of my Sun Basket meals. Remember when quinoa was super trendy?! I’m returning to 2012 and bringing back this super grain. Kale Pesto Quinoa Bowl with blistered tomatoes, crispy chickpeas, sliced avocado, tzatziki, and a sprinkle of fresh basil.

To make quinoa, I used my vegan Kale Cashew Pesto recipe (link in bio) and prepared 1 cup quinoa. Then when the quinoa was cooked I mixed the pesto into it to warm.

To blister tomatoes, add oil to a pan on medium high and cook for a few minutes, turning occasionally. Chickpeas are tossed in oil and @primalpalate New Bae Seasoning and smoked salt and baked at 425 for 25-30 min. Tzatziki is from @wholefoods!

This Vegan Quesadilla with Black Beans, Sweet Peppers, Onions, and Spinach is one of my faves. I used @sietefoods almond flour tortillas and @miyokoscreamery vegan mozzarella (I get both at Whole Foods). To make, crisp the tortillas up first directly over the stove. Transfer to a plate and spread cheese on one side. Sauté veggies and black beans in a pan and add to tortilla. Top with the other tortilla and add it to a pan with olive oil, cover and cook on med high for a couple minutes on each side until cheese is melted.

Crinkle Cut Seasoned Potatoes with Avocado Jalapeño Dipping Sauce. I think I could survive life just eating potatoes and avocado... and maybe some kale 

To make the potatoes, slice them using a crinkle cut knife (I got mine on Amazon.) Spread on a baking sheet, drizzle with olive oil and top with a dash of garlic powder, onion powder, paprika, salt, and pepper. Bake for 20-25 minutes at 425. Top with fresh parsley or cilantro.

To make the sauce, blend together 1/2 large avocado with juice of 1/2 lime, a pinch of salt, and approx 2 tablespoons sliced jalapeño (I used the jarred kind because I happened to have some on hand, but you can use fresh too!)

On my way to Mammoth today and Tahoe tomorrow, but I thought it was time to share this super easy Mexican-Inspired Hash. Sautéed potatoes, poblano peppers, spinach chicken sausage, green onion, cherry tomatoes, avocado, and hot sauce.

I always sauté my hashes in a cast iron skillet since everything get nice and crispy on the outside but soft on the inside. Just cook on medium with some oil and cover for 7-8 minutes, stirring occasionally.

Spiralized Sweet Potato Waffle topped with @kitehillfoods almond milk cream cheese, avocado slices, smoked salmon, and Everything But The Bagel Seasoning.

If you don’t have a spiralizer or a waffle iron, you can cook the sweet potatoes as a hash and eat this that way instead.

To make sweet potato waffles, spiralize 1 sweet potato, cook in a pan with oil on medium heat covered for 7-8 minutes until soft (Season if desired. I like @primalpalate New Bae Seasoning or garlic and onion powder with some salt and pepper). Transfer to a bowl and mix with one egg. Place into a waffle iron on med heat and cook for 4-5 min until waffle is crisp and can be easily removed with a fork. Check my story highlights for more instructions!

Creamy, spicy Shakshouka! This Shakshouka is made with a vegan vodka sauce (@jargoods) and I mixed in some tzatziki and harissa and topped it off with some fresh parsley.

To make an easy Shakshouka, heat up sauce in a small pan until it just begins to bubble. Crack two eggs directly into the pan and cover on medium low heat. Cook for a few minutes until whites have just cooked through but yolk is still runny. Keep an eye on your eggs to make sure they don’t overlook.

I like to mix in fresh herbs like parsley and basil and top it off with a drizzle of olive oil. Tzatziki and harissa are both @cava, and I got them at Whole Foods.

This is your ultimate Sunday brunch and you need to make it ASAP: “Avocado Toast” Spiralized Sweet Potato Waffles, topped with mashed lemon avocado,  heirloom cherry tomatoes, feta, basil, and black sea salt.

To make waffles, spiralize one medium sweet potato (I used a Japanese yam), and sauté over medium heat in olive oil for about 6-8 minutes until soft. I like to add in some seasoning, and I’ll either do salt, pepper, garlic powder, and onion powder, or I’ll use @primalpalate New Bae Seasoning. Mix in a bowl with one egg, and spoon into your waffle iron. Cook for about 4-5 minutes on medium heat until waffles are golden and firm! You should be able to lift them up with a fork and they should stay together.

1 cup full-fat coconut milk, stirred so the cream mixes with the liquid
1 cup passion fruit juice
Juice of 1 lime
1 teaspoon honey

-Sometimes I go out drinking with friends
- I really enjoy loaded tater tots
- I don’t bring my own food, supplements, matcha, eye masks, etc. with me when I travel. I just show up the airport 🤷‍️
- I don’t find smoothies or juice satisfying
- My skincare routine consists just of taking off my makeup and moisturizing
- I’m not a spiritual person. Crystals are lovely, but they’re not my jam.

There are many other parts of me that fit the stereotype, don’t get me wrong. I’m a blonde girl living in LA who drives a Prius, goes to yoga, brings her reusable bag to Whole Foods, and loves to eat kale salad for lunch.

But wellness is not one size fits all. You don’t need to have the same habits as your favorite bloggers to be healthy. It’s okay if you check some boxes and not the other. Fresh & Easy Egg Scramble: Two pasture-raised eggs with sautéed onions, tomatoes, and arugula topped with avocado, harissa, and broccoli sprouts. Just sauté the onions first, add the tomatoes for a min, mix in the arugula, and pour in the scrambled eggs. I like to use low heat and cook it slowwww, moving the eggs around. And season with some salt and pepper. That’s all!

Farmers markets and grocery stores are my second home. When I'm not in the kitchen or at my computer, I'm stocking up on kale and avocados. When I was writing my cookbooks, I would spend every morning going to at least one store to get my ingredients, and now I try to go to the farmers market as much as possible. I get the most inspiration when I'm walking through the different booths. I love seeing what's grown nearby and picking up produce I can't find at the grocery store. I can honestly spend hours at a good market. For a farmers market outing, you can find me throwing on a dress and a pair of sneakers. Pictured here: @colehaan Generation ZEROGRAND Sneakers. Jalapeño Potato Hash with a pasture raised fried egg, avocado slices, parsley, bagel seasoning, crushed red pepper, and a sprinkle of parm.

Hash directions: Heat up olive oil on medium low heat in a cast iron skillet. Sauté onions, potatoes, and chopped jalapeños for about 7-8 minutes. Cover to help the potatoes soften, and stir frequently!

Thankful for a good salad on a warm summer day. Kale Salad with crispy spiced chickpeas, heirloom cherry tomatoes, sugar snap peas, Persian cucumbers, broccoli micro greens, and honey mustard balsamic.

To make crispy chickpeas, I use canned chickpeas that are rinsed and drained and patty down dry. Toss them in olive oil and seasoning of choice (I used @primalpalate New Bae here). Bake for 25 min at 425 F.

Dressing is a mix of about 1 tablespoon Dijon mustard, 2 tablespoons balsamic vinegar, 1 tablespoon olive oil, and 1/2 teaspoon honey (approximately, I usually just eyeball it tbh)

Shrimp is cooked in ghee and citrus spice. Dressing is a blend of miso, tahini, apple cider vinegar, and lemon.

Savory Everything Bagel Waffle with “Cheesy” Scrambled Eggs, Avocado, and Pickled Red Onion. Made the waffles using the @birchbenders paleo mix and just mixed in the Trader Joe’s Everything But The Bagel Seasoning. Scrambled eggs are made with @miyokoscreamery vegan mozzarella. Topped it all off with more bagel seasoning of course.

My waffle iron has been one of my favorite purchases. I probably got it for 30 bucks on Amazon, and I’ve used it way more than I ever thought I would, especially because I love making waffles out of veggies like sweet potato and zucchini!

Savory Everything Bagel Waffle with “Cheesy” Scrambled Eggs, Avocado, and Pickled Red Onion. Made the waffles using the @birchbenders paleo mix and just mixed in the Trader Joe’s Everything But The Bagel Seasoning. Scrambled eggs are made with @miyok

Ingredients
- 1 egg (sub flax egg if vegan)
- 1/4 melted coconut oil
- 1/3 cup cashew butter
- 1 tsp vanilla
- 2 tablespoons almond milk
- 1 cup almond flour
-1/2 cup coconut sugar
-1/4 tsp baking soda
-1/4 tsp salt
- 1 cup chocolate chips
- 1 cup broken @FitJoy pretzel pieces

Preheat oven to 350. In a medium bowl, whisk egg & combine w/melted coconut oil, cashew butter, vanilla & almond milk
- In a separate bowl, mix almond flour, coconut sugar, baking soda, and salt.
- Mix dry ingredients into wet ingredients. Fold in chocolate chips & pretzels
- Line a baking sheet with parchment paper. Scoop dough into 2 inch balls and press flat. Top with pretzel & flaky sea salt. Bake 15 min or until golden brown

Throw some veggies on a plate and call it breakfast   Egg Scramble with Truffle Yogurt Potatoes & Baby Kale, Cherry Tomatoes, Sliced Avocado, and Pickled Red Onion.

Cooked the potatoes in my cast iron skillet with some oil covered on med heat for 7-8 min. Mixed in the baby kale at the end with some truffle salt and yogurt. Egg was a failed fried egg that I just scrambled when the yolk broke 🤣

Happy Friday!! Started my day off with a morning meditation and yoga class, so I’m feeling good  And I’m bringing back Collard Wraps!! This one is loaded with chickpeas, avocado, cucumber, cherry tomatoes, green onion, hemp seeds, lemon, parsley, dried herbs, and salt and pepper. If you want to learn how to make a collard green wrap, check my story highlights.

This made 2 mini collard wraps which serves 1 person. Deets on the filling below:

2 medium collard greens, stems sliced off and steamed
1/2 can chickpeas rinsed and dried
1/2 avocado, cubed
1 Persian cucumber, finely chopped
6 cherry tomatoes, finely chopped
1 stalk green onion finely sliced
1 teaspoon hemp seeds
Juice of 1 small lemon
1 teaspoon chopped fresh parsley
1 teaspoon @primalpalate Amore seasoning (or your choice of dried herbs)
Salt and pepper to taste
Mix together in a bowl to use as filling for wrap!

Salmon Quinoa Poké Bowl! I got sashimi grade salmon at the Brentwood Farmer’s Market and made a poke bowl with quinoa, cucumbers, snap peas, baby kale, avocado, and spicy sriracha mayo.

Salmon is marinated in lime, soy sauce, and sesame seeds with a sprinkle of wasabi salt. Baby kale is tossed in sesame oil and rice vinegar. If you want to make your quinoa more like sushi rice, mix it with rice vinegar/some honey. Sriracha mayo is made with @yellowbirdsauce sriracha and @primalkitchenfoods garlic aioli mayo!

Can you believe it’s my first time making Sweet Potato Toast?! This one is inspired by Turkish Eggs. Toasted sweet potato Slices topped with goat milk yogurt, avocado chunks, cucumbers, poached eggs, fresh parsley, paprika, and pickled red onions.

To make the toast, just slice a sweet potato lengthwise into 1/4” thick slices. Place in the toaster and toast on high. You’ll probably have to do it 2-3x to get it cooked fully! Worth it though. So good!

Goat milk yogurt is from the Brentwood Farmer’s Market. I make my own pickled red onions at home! There are plenty of recipes online, but I usually use Bon Appetit

#ad My ideal morning involves taking my time and drinking my rose matcha latte in bed with a good book. I always make my matcha lattes with non-dairy milk, and I just tried a new one from @BolthouseFarms that is made from pea protein!

I'm normally wary of pea protein products because they usually have a strong taste, but this one was NOT like that at all. It has a nice thick and creamy texture, which makes it perfect for an iced matcha. Added bonus: It has 10 grams of pea protein per serving, which works out in the morning for me since I often make matcha before I get to making breakfast or get to work.

To make the Rose Matcha Latte, I just poured 1 cup of the Bolthouse Farms Plant Protein Milk over ice and whisked together 1 1/2 teaspoons of matcha, 1/4 cup milk, and 1 tablespoon rose water and poured it over the milk. #thefutureofmilk #bolthousefarms

Sometimes my best meals come as a result of complete experimentation. Today’s LOADED brunch: Sweet Potato & Onion Pancake Topped with Mashed Avo, Sauteed Garlic Greens, Fried a Egg, Sriracha, and Sprouts.

To make the pancake, I finely chopped and roasted about half of a large Japanese sweet potato with some bay seasoning. After roasting, I mixed it in a bowl with some sautéed onions, 1 egg, salt, and pepper. Then I fried them in a pan in some oil for about 2 minutes on each side. YUM. This made 2 small pancakes.

Tuna Melt Pasta! Honestly canned tuna gets a bad rap, but I think there are plenty of wtS to make it taste good. This pasta dish is inspired by a tuna melt and is made with @primalkitchenfoods garlic aioli mayo, celery, red onion, @miyokoscreamery vegan mozzarella, parsley, and apple cider vinegar. Recipe below! (Serves 2)
. - 2 servings pasta of choice (I used whole wheat here)
-1 small can tuna -2 tablespoons garlic aioli mayo 
2 stalks celery, finely chopped
-2 tablespoons finely chopped red onion - 1 tablespoon chopped parsley - 1/4 cup vegan mozz
- 1/2 tablespoon acv

Prepare pasta according to package. Drain and return to pot, turning on heat to medium low. Add the remaining ingredients and stir for a minute or two until everything is warm and cheese is melted. Add salt and pepper to taste, if desired. Serve warm!
