Glass Potato Chips⁠
6 medium-sized Yukon Gold potatoes⁠
1/2 tablespoon olive oil⁠
1 teaspoon kosher salt⁠
4 cups water⁠
4 tablespoons potato starch⁠
Chives and rosemary, for garnish⁠
Olive oil, for garnish⁠
⁠
Steps:⁠
For the potato stock: Wash potatoes with cold water and dry with paper towels. Using a knife, cut an X into potatoes to vent. Do not cut all the way through. ⁠
Place potatoes, salt and oil in a large stock pot. Cover with 4 cups water. Bring to a boil, and cook for 25 to 30 minutes. Let potatoes cool in stock pot at room temperature. Once cool, strain potatoes and save the liquid. This is our potato stock. Save potatoes for another recipe. Cover the stock and refrigerate for 8 hours or overnight.⁠
For the potato gel: Preheat oven to 225 degrees. Pour chilled potato stock into a large saucepan. Add potato starch to mixture. Over medium-high heat, whisk to dissolve the starch into the potato stock. Continue to whisk for about 5 minutes until a gelatin consistency forms. Remove from heat. Pour into a squeeze bottle and allow to cool slightly.⁠
On a parchment paper-lined baking sheet, squeeze gelatin mixture into potato chip-sized shapes. Place in oven for 4 hours. Once chips have baked, carefully remove them from the parchment paper. Garnish with chives and rosemary, and enjoy.⁠

Brine:⁠
1 head garlic, halved crosswise⁠
1 tablespoon salt⁠
1 teaspoon freshly ground black pepper⁠
1 tablespoon olive oil⁠
2 tablespoons balsamic vinegar⁠
1/2 large lemon⁠
2 bay leaves⁠
4 cups water⁠
Chicken:⁠
1 (3 to 4 pound) chicken⁠
1/2 large lemon⁠
2 sprigs thyme⁠
2 sprigs tarragon⁠
7 cups kosher salt⁠
10 large egg whites⁠
⁠
Steps:⁠
In a large pot over high heat, combine garlic, salt, pepper, olive oil, halved lemon, lemon juice, balsamic vinegar, bay leaves and water. Bring to boil. Remove the brine from heat and cool to room temperature.⁠
Once the brine is cooled, submerge the chicken. Refrigerate covered for at least 4 hours.⁠
Preheat oven to 350 degrees.⁠
Remove the chicken from the brine and pat dry. Place the lemon half, tarragon and thyme into the chicken cavity and truss with kitchen twine. Discard the brine.⁠
In a large bowl, combine the salt and egg whites. Place one-third of the mixture into an 8 x 10 1/2-inch roasting dish. Nestle the chicken on top of the salt and cover with remaining salt mix.⁠
Roast for 1 hour and 10 minutes or until the salt is hard and dry.⁠
Set aside to rest for 15 minutes before cracking off the salt. The skin will be very salty, but the meat underneath will not. Make sure to peel away the skin to reveal the juicy and tender meat underneath.⁠
Serve with your favorite roasted vegetables.⁠

1 watermelon⁠
2 sheets sponge cake⁠
150 grams whipped cream⁠
250 grams matcha chocolate, melted⁠
50 grams cream⁠
60 grams dark chocolate, melted⁠

Steps:⁠
Cut out watermelon with a round mold 15 centimeters wide and set aside.⁠
Cut out sponge cake to the same size.⁠
Place watermelon round on top of the sponge cake. Then top it off with the second sponge cake.⁠
Spread whipped cream all around and refrigerate for one hour.⁠
Combine melted matcha chocolate with cream and pour over the chilled cake.⁠
Decorate with dark chocolate to mimic a watermelon's design.⁠
Slice and serve.⁠

Steamed Piggy Buns ⁠

Ingredients:⁠
300g cake flour⁠
4g dry yeast⁠
100g sugar⁠
1 tbsp vegetable oil⁠
150 ml milk, room temperature⁠
1 -2 drops of gel pink food⁠
Edible black marker or black sesame seeds⁠
⁠
Steps:⁠
Place the flour, instant yeast, sugar, and cooking oil in the bowl of a stand mixer fitted with a dough hook. Mix until well combined. Gradually add in milk. If you are kneading by hands, about 10-15 minutes until the dough is no longer sticky and smooth⁠
Pinch of about 20g of the white to make the piggies snouts and ears. Wrap in plastic wrap and set aside. Add the pink food colouring on the rest of the dough to make a pink colour and continue to knead until the colour is evenly mixed into the dough.⁠
Divide the dough into 16 portions. Use the palm of your hand to slightly flatten each piece and then fold from the outside into the centre to form a ball. Pinch the folds at the bottom to help it stick together.⁠
To make the nose and ears, roll out the white dough. Use the end of a piping tip measuring 1cm to cut out 16 snouts. Use the end of a round piping tip measuring .5cm to cut out 32 circles for the ears. Pinch one end of the ears and then flatten with your finger to complete.⁠
Stick the noses onto the front of each bun and use a toothpick to indent nostrils into the snout. Stick the ears on top.⁠
Set the buns aside to rise in a warm spot for about 20 minutes. ⁠
Bring the water in your steamer to a boil. Place the buns in there, leaving about 1-inch space in between and steamed on low heat for 5 minutes. If you’re making large buns add two at a time, and three at a time for the baby buns.⁠
After 5 minutes, turn off the heat. DO NOT OPEN THE LID of the steamer. Let the buns sit there for 1 minute like this. The buns will not sink or wrinkle due to the sudden change in temperature.⁠
Draw the eyes on the buns using the marker. If using sesame seeds add before steaming.⁠

1 tub frozen whipped topping, thawed⁠
1/2 cup marshmallow fluff, warmed⁠
1 package chocolate instant pudding mix⁠
14 S’mores Oreos, chopped ⁠
12 vanilla ice cream sandwiches⁠
1/2 cup hot fudge ice cream topping, warmed⁠
1/2 cup mini marshmallows⁠
⁠
Steps:⁠
In a medium mixing bowl, whisk marshmallow fluff and 1 cup whipped topping with a hand mixer until blended. Add pudding mix and blend until fully combined. Stir in 1 cup chopped cookies.⁠
To build your cake, lay 4 ice cream sandwiches, side-by-side, on a freezer-safe serving platter; cover with half the pudding mixture. Repeat layers and top with remaining sandwiches. Frost with remaining whipped topping and garnish with remaining chopped cookies, mini marshmallows and chocolate sauce. ⁠
Freeze for at least 2 hours.⁠

Strawberry Lemon Oreo Bombs ⁠

Ingredients:⁠
4 ounces cream cheese, softened⁠
20 Lemon Oreos⁠
8 small strawberries⁠
8 ounces white chocolate, melted⁠
1 cup freeze dried strawberries, crushed ⁠
⁠
Steps:⁠
In a food processor, crush the Oreos into a fine crumble. Add softened cream cheese and process until a smooth dough is formed. Transfer to the fridge for 20 minutes to firm up.⁠
Clean and trim the strawberries. ⁠
Once the dough is firm begin assembling the truffles. Pinch off about 2 tablespoons of dough and flatten into a disc in your hand. Place a trimmed strawberry in the middle, pinch the dough around and roll into a ball. Place the now filled truffles on a parchment lined baking sheet or plate and place in the freezer for 20 minutes to firm up.⁠
Dip frozen truffles into the melted white chocolate to coat and place on a wire rack. Dust with freeze dried strawberries and return to the fridge until ready to serve.⁠

1 package strawberries, halved⁠
Mixed berries⁠
1 dragon fruit⁠
Edible flowers⁠
Mint⁠
Cranberry jello liquid:⁠
1 cup cranberry juice⁠
1 1/2 tablespoons granulated sugar⁠
1 teaspoon agar agar powder⁠
Carbonated jello liquid:⁠
1 cup water⁠
1/4 cup granulated sugar⁠
2 teaspoons agar agar powder⁠
1 cup carbonated water⁠
⁠
Steps:⁠
Use a melon baller to scoop out the dragon fruit and place a few pieces in a Bundt pan. Add some of the mixed berries and strawberries.⁠
For the cranberry jello: In a small bowl, combine agar agar powder and sugar.⁠
Boil cranberry juice in a small saucepan, and add agar agar and granulated sugar mixture. Whisk to combine, then remove once sugar has melted.⁠
For the carbonated jello: In a small pot, bring water to a boil. Add agar agar powder and sugar and whisk until melted. Remove from heat, then add carbonated water and stir to combine. Pour this mixture over the fruit until it is covered. Place pan in refrigerator until solid.⁠
Add more fruit to the pan and pour more of the carbonated jelly over the top. Place in refrigerator until solid.⁠
Add remaining fruit, then pour the cranberry jello over the top. Return to refrigerator until solid. Garnish with fruit, mint leaves and edible flowers to serve.⁠

Thousand Layer Brownies⁠
150g butter cubed⁠
300g dark chocolate chopped⁠
6 eggs ⁠
375g golden caster sugar⁠
150g plain flour ⁠
45g cocoa powder ⁠
1 1/2 tsp baking powder⁠
200g white chocolate chopped⁠
200g dark chocolate chopped ⁠
⁠
STEPS:⁠
Preheat oven to 180C. ⁠
Line a 22cm square baking tin with parchment. ⁠
Make the brownie batter:⁠
Add the cubed butter and 300g of chopped chocolate to a heatproof bowl, and place over a pan of simmering water ensuring the base of the bowl doesn’t touch the water. Allow the butter and chocolate to melt and stir together. Set aside and allow to cool to room temperature. ⁠
Take your eggs and caster sugar and using an electric whisk beat together until light and fluffy - approximately 5 minutes. In a separate bowl sift together the flour, baking powder and cocoa and mix to combine. Fold the chocolate mixture into the eggs ensuring you don’t take all the air out of the mixture. Pour the chocolate egg mixture into the bowl with the flour and fold once again until fully incorporated and there are no pockets of flour. ⁠
Assemble your brownies:⁠
Chop 200g of white chocolate and 200g of dark chocolate, cutting at an angle with your knife to achieve long shards of chocolate. ⁠
Pour a small amount of the brownie batter into the prepared tin - roughly Ÿ of the mix and just enough to cover the base. Next sprinkle over an even layer of your chopped white chocolate, followed by another Ÿ of batter. Repeat this alternating the white and dark chocolate shard layers until you finish with a sprinkling of dark chocolate on the top. ⁠
Place your brownies into the middle of the oven for 30 - 35 minutes until the middle is just set but still a little fudgey. Allow to cool in the tin, then remove and slice. You will be able to see all the delicious chunks of chocolate - delicious!⁠

Chicken a La Croix⁠
INGREDIENTS:⁠
1 (3-pound) roaster chicken⁠
3 tablespoons olive oil⁠
2 tablespoons tangerine zest⁠
1 tablespoon lemon zest⁠
1 tablespoon brown sugar⁠
2 teaspoons fresh thyme leaves, picked, plus more for roasting⁠
1 teaspoon fresh rosemary, minced, plus more for roasting⁠
1 teaspoon of sea salt⁠
Freshly ground black pepper⁠
3 tangerines, halved⁠
1 lemon, sliced into rounds⁠
1 head garlic, halved⁠
1/4 cup white wine⁠
1 (12-ounce) can citrus seltzer like La Croix Tangerine or Grapefruit⁠
⁠
STEPS:⁠
Preheat the oven to 400 degrees and remove the second rack. Secure the lower rack at the lowest setting so the chicken will fit standing upright.⁠
Pat chicken skin dry. In a small bowl, combine olive oil, tangerine zest, lemon zest, brown sugar, thyme leaves, and minced rosemary. Stir to combine and brush over entire chicken. Stuff 1 tangerine half in the top cavity of the chicken. Sprinkle the entire bird with salt and pepper.⁠
In a medium roasting pan, place remaining halved tangerines, sliced lemon, halved garlic and additional sprigs of rosemary and thyme. Add white wine. Place open seltzer can in the middle of the pan.⁠
Place the chicken over the can by opening the rear cavity and sliding it over the can until only about an inch of the can is showing. Rest legs on sliced citrus to avoid burning.⁠
Roast for 15 minutes to brown skin, then reduce heat to 350 and roast for 45 minutes, or until the internal temperature is 160 and the skin is crisp and golden.⁠
Remove the pan from the oven and carefully transfer the chicken from the can to a flat surface. Let rest for 20 minutes before slicing to serve. Serve drizzled with pan juices.

STEPS:⁠
Heat olive oil, garlic and chili in a frying pan over low heat until fragrant. Add in tomato sauce, sugar, salt, black pepper, and bouillon granules and mix well.⁠
Add in cooked spaghetti and cheese.⁠
Bake for 10 minutes at 220 degrees C.⁠
Sprinkle more black pepper on top before serving.⁠

1.2kg boneless piece of pork shoulder⁠

250g white cabbage, finely shredded⁠
50g carrot, finely shredded⁠

Make the pulled pork - Place the pork into a deep ovenproof dish. Rub the spices and salt all over the joint, then pour the apple juice into the base of the dish. Cover tightly with foil and cook in the oven for 4 hours. If not completely tender and falling apart, then return to the oven and continue to cook, checking every 30 minutes. Remove from the oven then discard any fat or skin before shredding the meat and cooking juices together with two forks.⁠
Make the coleslaw - Mix together all the ingredients⁠
To serve: Griddle the cut sides of each brioche roll, then top with Ÿ of the pulled pork and Ÿ of the slaw.⁠

1 (6 to 8-inch-long) russet potato⁠
6 tablespoons butter, melted⁠
1 pound Yukon Gold potatoes, peeled and chopped⁠

1/2 cup cream⁠
3/4 cup Gruyere⁠
Pinch freshly grated nutmeg⁠
Sea salt, to taste⁠

STEPS:⁠
Preheat oven to 400 degrees. Create a few tubes by rolling aluminum foil up lengthwise on itself. Spray these with cooking oil. Slice the russet potato on a mandoline lengthwise, creating about 15 to 20 slices that are 6 to 8 inches long. Wrap each slice around the prepared tubes and place seam side down on a baking sheet. Brush the wrapped potatoes with butter and sprinkle with sea salt.⁠
Bake the potatoes for 8 to 9 minutes, until crisp and browned. Allow cooling slightly then remove from the aluminum foil mold while still warm. Set aside to cool completely on a wire rack.⁠
Meanwhile, make the mashed potato filling. Bring a large pot of water to boil and add the gold potatoes. Simmer until potatoes are fork-tender, about 20 minutes. ⁠
While the potatoes are cooking, warm the cream over low heat. Drain the potatoes, return them to the pot and mash them well with the butter. Add half of the warm cream and mash until mixed, then add the remaining cream and half of the cheese. Mix well, then mix in the remaining cheese little by little until all of it is incorporated. Add the nutmeg then salt to taste.⁠
Allow the potato filling to cool slightly, then put it into a piping bag with a star tip. Pipe the potato filling into the cooled potato cannolis and sprinkle with chives. Serve immediately.⁠

When the peaches have cooled, cut four large triangles from the pie crusts and position a peach on each one. Put two toffees into the core of each peach, then seal the pastry around it using an egg wash on the seams. Place in the fridge to chill for 30 minutes.⁠
Preheat the oven to 390 degrees. Bake the pies for 30 minutes, then let them cool slightly while you make the simple syrup. ⁠
In a saucepan, add the water and sugar. Stir with a wooden spoon until the sugar has dissolved, then let it come to a boil before taking off the heat and dividing between 2 small mixing bowls. Color one of the bowls yellow and the other one pink. Put the caster sugar into another bowl.⁠
Dip the baked pies in the yellow color on one side and pink on the other, then put them straight into the caster sugar and spoon the sugar over them. Place on a serving plate and decorate with mint leaves before serving.⁠

250g desiccated coconut⁠
250g condensed milk⁠
1/2 tsp vanilla paste⁠
500g milk chocolate⁠

STEPS:⁠
Stir together the desiccated coconut, condensed milk, and vanilla paste until combined. Form the mixture into 8 bars and place in the fridge to set up.⁠
Melt the milk chocolate until it's completely smooth. Place the bars on a wire rack set over a baking tray and pour the chocolate over the bars in a continuous stream so that the chocolate covers each coconut bar and it dribbles down the sides. Level it with a skewer so that the chocolate is flat.⁠
Place in the fridge for 30 minutes to set up, but keep the chocolate warm.⁠
Turn the bars over and repeat the process of covering them so that every side of the bar is covered with chocolate.⁠
Using a skewer, flick the chocolate to create 3 parallel lines on each bar, moving quickly between them to create markings on top of the bars. Leave to set and then serve.⁠

Ingredients⁠
Cookie crust:⁠
4 cups double chocolate chip cookies (about 28 Tate's Bakeshop cookies), crushed⁠

Chocolate mousse:⁠
12 ounces semisweet chocolate, finely chopped⁠
2 1/2 cups chilled whipping cream, divided⁠
1/3 cup sugar⁠
2 teaspoons espresso powder⁠
1/2 cup mascarpone, softened at room temp⁠
Whipped cream layer:⁠
1 1/4 cups heavy whipping cream⁠
1 teaspoon vanilla⁠
1/4 cup powdered sugar⁠
Chocolate shavings, for garnish⁠
Steps⁠
Preheat oven to 350°F. Line the bottom and edges of a 9-inch springform pan with parchment paper.⁠
Mix crushed cookies and butter and press into the bottom and up the sides of springform pan. Bake for 15 minutes. Set aside and make the mousse.⁠
Place chocolate, 1 cup of cream, sugar, and espresso powder in the bowl of a double boiler. Heat over the stovetop until chocolate is melted, stirring to incorporate all of the ingredients.⁠
In another bowl beat remaining 1 1/2 cups of cream until soft peaks form. Add mascarpone and continue beating until stiff peaks form. Fold in chocolate mixture.⁠
Pour mixture over cookie crust. Place in refrigerator while you make whipped cream layer.⁠
Pour cream and vanilla into a bowl and whip until soft peaks form. Add sugar and continue whipping until stiff peaks form. Top chocolate mousse layer with whipped cream.⁠
Refrigerate for 6 hours to overnight. Garnish with chocolate shavings.⁠

Salt and freshly ground black pepper⁠
1/2 cup Parmesan⁠
3/4 cup flour⁠
2 eggs⁠
2 chicken breasts, skinless⁠
For the dressing:⁠
3 cloves garlic⁠
4 anchovy fillets⁠
1 tsp salt⁠
2 large egg yolks⁠
1 cup extra-virgin olive oil⁠
1 tsp freshly ground pepper⁠
1 tbsp freshly squeezed lemon juice⁠
1 tsp Worcestershire sauce⁠
1/2 tsp Dijon mustard⁠
To serve:⁠
1 cup freshly grated Parmesan cheese⁠
2 heads of lettuce, roughly ripped into large pieces⁠
Steps⁠
Preheat oven to 400 degrees.⁠
For the croutons:  Tear the bread into rough pieces, toss with 3 tablespoons olive oil and season well with salt and pepper. Spread out on a baking sheet and place into the oven for 10 to 15 minutes until golden brown and crispy. Set aside to cool.⁠
To make the dressing:  In a mortar and pestle, crush the anchovy fillets, garlic and salt until a paste forms. Place the egg yolks in a bowl and slowly begin to add the oil, really slowly at first to prevent the mixture from splitting. Add the anchovy paste and the rest of the ingredients. If mixture is still thick, loosen with a tiny bit of water, then set aside until needed.⁠
Once cool, place the croutons into the bowl of a food processor along with the Parmesan and blitz until fine, then set aside in a bowl. Place the flour into a separate bowl and season well with salt and pepper. Break the eggs into a third bowl and beat with a fork.⁠
Place the chicken breasts between two sheets of parchment paper and flatten until 1/2 inch thick. Dip the flattened chicken breasts first in the flour, then the egg, then the Parmesan crouton mix.⁠
Heat the remaining 2 tablespoons olive oil in a pan, and cook the chicken breasts for about 5 minutes each side, or until golden, crispy and cooked through.⁠
To serve:  Mix the dressing with the lettuce leaves and Parmesan and place onto a plate. Slice the chicken into thin strips and serve over the salad.⁠
